How to make it

  • Combine dressing in a small bowl and set aside. Tast for salt.
  • Shred and juliane vegtables into a large salad bowl. Toss. Pour dressing over top and toss, taste for salt and pepper.

    Peanuts crossed my mind, but I was trying to keep calories down. You can cut back on oil, but also cut back on vinegar or it will be very tangy. It's the standard ratio for a vinegarette. Keep some of the sesame oil, you want that flavor.

    I'll probably cut back on the oil, but other than that, it looks like a winner. How about some chopped salted peanuts on top?
