How to make it

  • Use a heavy pan--stir ALL of the time, and use a candy thermometer.
  • Melt 1 # of butter over low heat. Remove from heat, and add everthing but the vanilla. Cook until candy thermometer reches 246 degrees.
  • Remove from stove, and add vanilla. Pour mixture into two greased 9x13 pans. Let cool for several hours
  • Cut into strips and wrap pieces into waxed paper. (Takes a bunch of time, so, to make it a little easier, I like to roll into little "snakes" these caramels and then wrap them..)
  • ***can cut recipe in half and still get terrific results!
