The serendipitous meeting of sweet and salty is embodied in a super easy to make cookie.

Ingredients
  • 2 rows of Saltine Crackers with salted tops
  • 2 sticks of butter
  • 1 c. brown sugar
  • 1 bag-semi-sweet chocolate chips (Sometimes if I'm feeling super decadent, I get Ghirardelli's dark choc. chips).

Directions
  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with foil or parchment and spray with a Pam type spray.
  3. Break up saltines in large pieces and layer bottom of cookie sheet to cover all the foil or parchment. (Sometimes I lay out all the whole saltines, and then stick my finger in the center of each to break them up. Seems easier that way, and strangely satisfying if you've had a bad day).
  4. In saucepan over medium heat, melt butter with brown sugar until dissolved and incorporated.
  5. Pour this mixture evenly over the saltines and bake for 8 minutes, or until bubbly.
  6. Remove cookie sheet from oven and sprinkle with chocolate chips. Let sit for 10 minutes, then spread chocolate to cover.
  7. Put cookie sheet in refrigerator until cold.
  8. When cool and hard just break it up and eat.
  9. I recommend having several people on hand when this is ready to go, so as to avoid the shame of eating the ENTIRE batch.
