How to make it

  • Preheat the oven to 375 degrees.
  • Whisk the flours, sugar and baking powder together in a small bowl, set aside.
  • In a large bowl, beat together coconut oil, marmalade and ginger.
  • Add half the flour mixture, stirring briefly, then add the buttermilk, vanilla and egg.
  • Add the remaing flour mixture and cranberries and stir just to combine.
  • Bake for 20 to 22 minutes.
