Couscous Salad

- 2 cups of couscous (whole grain if you can find it) shopping list
- 2 cups of boiling water shopping list
- Pinch of salt shopping list
- Knob of butter shopping list
- Half an onion, diced shopping list
- 2 inches of cucumber, diced shopping list
- A few leaves of salad, sliced shopping list
- A few sugarsnap beans, sliced shopping list
- Half a can of kidney beans or chikpeas shopping list
- A few pieces of cooked chicken, diced shopping list
- 2 sundried tomatoes, chopped shopping list
- As much feta cheese as you fancy shopping list
- A few pinches of parsley, finely chopped shopping list
- salt and pepper to taste shopping list
How to make it
- 1. Put the couscous in a bowl that a lid or a plate will fit on (use the bowl you want to serve in to save some of the washing up). Add salt and pour in boiling water from your kettle. Cover with lid/plate and leave for a few minutes.
- 2. Chop, slice and dice your ingredients.
- 3. Remove lid from bowl and fluff grains with a fork. Add the butter and stir until it's melted into the couscous.
- 4. Add your ingredients and you're done!
- The thing to remember with this recipe is that you can vary the ingredients to your own taste. If you don't like parsley, don't add it! If there's anything else you want to add, do it!
