Ginger Pork Meatballs On Soba With Peanut Sauce

- For the meatballs: shopping list
- 1 pound lean ground pork (I grind mine myself so I can really control the fat and quality, but you can buy it at a store, just be careful that you get lean pork) shopping list
- 1/3 cup finely chopped cilantro shopping list
- 1/4 cup chopped green onion, white and green part shopping list
- 2 teaspoons finely chopped fresh mint shopping list
- 2 teaspoon finely minced fresh ginger shopping list
- 1 teaspoon finely minced garlic shopping list
- 1 teaspoon minced jalapeno shopping list
- Zest of 1 lime shopping list
- 1/4 cup panko (or as needed) shopping list
- 1 large egg beaten together with 2 tablespoons low-sodium soy sauce shopping list
- For the peanut/soy sauce shopping list
- 1 tablespoon smooth peanut butter, at room temperature shopping list
- 2 teaspoons low-sodium soy sauce shopping list
- 1 teaspoon sesame seed oil shopping list
- For the noodles shopping list
- 8 ounces soba noodle (a Japanese buckwheat noodle) shopping list
- 2 teaspoons vegetable oil (I use grapeseed oil) shopping list
- 1 teaspoon sesame seed oil shopping list
- 1 cup julienne red pepper shopping list
- 1 cup julienne snow peas shopping list
- 1 cup julienne carrot shopping list
- salt and pepper, to taste shopping list
- Finely sliced green onion tops, for garnish shopping list
- toasted sesame seeds, for garnish shopping list
How to make it
- Combine the meatball ingredients in a large bowl. Gently mix well. Check for flavors and adjust as needed with salt and pepper. (To test, make a small meatball, place in the microwave for a few seconds, about 30, when done taste. The meatball should also "hold together". If it doesn't, add a bit more panko.) Form into 20 meatballs.
- Please a foil lined jelly roll pan that has been sprayed with cooking spray into a 450 degree oven. Once hot, place the meatballs on the pan and cook, turning once, until cooked through See Photo. About 20 minutes.
- Meanwhile: In a large bowl, mix the peanut butter, soy sauce and sesame seed oil together with a wire whisk. Set aside.
- Bring a large pot of water to a boil.
- In a saute pan, heat the vegetable oil and sesame seed oil together until hot. Add the vegetables and saute for 5 minutes or so, or until crisp tender.
- Add the soba noodles to the boiling water. Cook, stirring a couple of times, until cooked; about 3 minutes. Drain reserving 1/2 cup of the cooking liquid.
- Add the soba to the sauce; add the vegetables and toss to mix, adding some of the cooking liquid if it seems to dry Divide the noodles and vegetables into 4 warmed shallow bowls. Top with meatballs; sprinkle with chopped onion and sesame seeds and serve.
