How to make it

  • First you want to preheat oven to 350 degrees.
  • Next you want to combine the graham crust and melted butter with 1 tbsp of sugar in a bowl.
  • Mix this well, so all graham is doused in butter.
  • Then foil the outside of the 8 in. pan.
  • Next press crumbs in the bottom and aroud the sides of the pan.
  • Bake this crust approx. 5 min.
  • Now you want to take a large bowl and add in it the cream, cheese, 1 c. sugar, and vanilla.
  • Then you can mix with blender until smooth.
  • Next add in the pumpkin, eggs, cinnamon, nutmeg, and the allspice and keep beating until smooth.
  • Now you want to pour into the graham crust.
  • Bake approx. 60-70 min.
  • Note that the top will get brown.
  • Take out and let cheesecake cool.
  • Chill cheesecake.
  • When cool add whipped cream and serve.

    Wow, this sounds a lot like a Cooks Illustrated recipe - except they dry out the pumpkin a little by spreading it over paper towels. Very tasty stuff you got goin on there.
