Cheesy Meatloaf

- 2 pounds meatloaf mix (beef, pork, veal) just lean beef is OK shopping list
- 3/4 cup bread crumbs shopping list
- 2 eggs, lightly beaten shopping list
- 2 tablespoons soy sauce shopping list
- 2 tablespoons ketchup shopping list
- 1 teaspoon worcestershire sauce shopping list
- 1 teaspoon mustard shopping list
- 1/4 teaspoon each teaspoon salt and pepper shopping list
- 1 cup packed shredded cheddar cheese shopping list
- 1/3 cup grated Italian cheese shopping list
- 1/4 cup blue cheese shopping list
- 1/2 cup green onions (scallions) shopping list
- 1 medium tomato, sliced and drained shopping list
How to make it
- Combine all the ingredients except the cheeses, onions, and tomato in a large bowl and mix well.
- Spread half of the mixture in a greased, 8 X 8-inch baking pan.
- Layer on the cheddar cheese, leaving a 1-inch border on all sides. Sprinkle with 3 tablespoons of the grated cheese, blue cheese, and green onions.
- Add the remaining meat mixture and press firmly around the edges to seal in the cheeses.
- Bake at 350 for 50 minutes.
- Arrange the tomato slices on top of the loaf and sprinkle with the remaining grated cheese.
- Continue baking at 350 until the tomato is slightly browned and the grated cheese is melted, about 10 more minutes.
- Allow to stand before serving.
- PREP NOTES: If you don't like the sharp taste of blue cheese, omit it. Also works fine without the tomato on top. I used an Italian 6-cheese blend on top and it is also fine. Dried onions can be substituted for the green onions. You can also use your own favorite meatloaf recipe.
