How to make it

  • Combine all the ingredients except the cheeses, onions, and tomato in a large bowl and mix well.
  • Spread half of the mixture in a greased, 8 X 8-inch baking pan.
  • Layer on the cheddar cheese, leaving a 1-inch border on all sides. Sprinkle with 3 tablespoons of the grated cheese, blue cheese, and green onions.
  • Add the remaining meat mixture and press firmly around the edges to seal in the cheeses.
  • Bake at 350 for 50 minutes.
  • Arrange the tomato slices on top of the loaf and sprinkle with the remaining grated cheese.
  • Continue baking at 350 until the tomato is slightly browned and the grated cheese is melted, about 10 more minutes.
  • Allow to stand before serving.
  • PREP NOTES: If you don't like the sharp taste of blue cheese, omit it. Also works fine without the tomato on top. I used an Italian 6-cheese blend on top and it is also fine. Dried onions can be substituted for the green onions. You can also use your own favorite meatloaf recipe.
