Indoor Barbecued Pulled Pork

- 1 tsp chili powder shopping list
- 1 tsp paprika shopping list
- 1 tsp garlic powder shopping list
- salt and pepper shopping list
- 2 pork tenderloins(1-1/2 to 2 lbs total)cut in 1" thick slices shopping list
- 1 TB vegetable oil shopping list
- 1/2 c chicken broth shopping list
- 1/2 c barbecue sauce shopping list
- 3 TB cider vinegar shopping list
How to make it
- Combine chili powder,paprika,garlic powder,1/4 tsp salt and 1/2 tsp pepper in small bowl. Pat pork dry with paper towels and sprinkle all over with spice mixture.
- Heat oil in large skillet over med-high heat until just smoking. Add pork and cook till well browned,4 to 5 mins a side. Transfer pork to large bowl,tent with foil and let rest 5 mins. Using 2 forks,shred meat into bite size pieces.
- Meanwhile,add broth,barbecue sauce and vinegar to empty skillet,scraping up browned bits. Simmer over med-low heat till sauce has thickened,about 3 mins.
- Stir in shredded pork and cook till heated through,about 2 mins. Season with salt and pepper and serve.Serve on hamburger buns with pickles..
- To make shredding easier,trim tenderloins well before cooking.
