Shitake And Glass Noodle Salad

- 6 shitake mushrooms caps removed and sliced shopping list
- 1 good sized handful of fresh spinach shopping list
- 1/2 cup chicken stock shopping list
- 2-3 tsp. soy sauce shopping list
- 1 tbsp olive oil shopping list
- 2oz single serving dried glass noodle (mung bean noodles) shopping list
How to make it
- 1.Place the noodles in a small sauce pan of water and turn the heat on to high
- 2. while the noodles come to a boil, heat a saute pan on medium heat. Add oil and mushrooms, and saute for 2-3 minutes.
- 3. Add the remaining ingredients and cover the pan until the spinach is just wilted.
- 4. Noodles should be done by the time the spinach has completely wilted. Add to the pan and toss.
