How to make it

  • 1. If you have a grill pan with a heavy iron press, use it. Otherwise, pan frying will also work. Heat the pan to medium heat. Season chicken with salt and pepper on both sides. Place on grill, cover with heavy iron press, and grill for about 2 mins on each side (or until cooked).
  • If you're adding mushrooms, place them on the grill as well and let them sizzle.
  • 2. When done, remove and plate. Take a strip or two of the smoked prosciutto and wrap the chicken (or, just place on top).
  • 3. Slice 1/3 of the mozzarella di bufala (about 1.5 cm thick). Place on top of the prosciutto. Sprinkle a bit of balsamic vinegar.
  • 4. Place about a handful of the greens into a mixing bowl. Dress with olive oil and sea salt. Then plate along side the mozzarella and chicken, or on top.
