How to make it

  • Heat oil in a large pot, saute onion, garlic and celery for approx 4 minutes. Add stock, lemon juice and zest, lentils, cumin and seasoning. Bring to the boil, then lower heat and simmer covered for about 30 minutes.
  • Add capsicum, spinach and more stock if needed. Recover and simmer a further 15-20 minutes.
  • Serve garnished with coriander and/or coriander salt and yoghurt.
