Lemon Lentil Soup

- 100g lentils (green or brown) shopping list
- 1tbsp olive oil shopping list
- 2 sticks celery, chopped shopping list
- 1 onion, diced shopping list
- 1 litre vegie stock shopping list
- 1-2 cloves garlic, crushed shopping list
- 1/4 tsp cumin shopping list
- 1 green capsicum, diced shopping list
- 1/2 bunch baby spinach leaves shopping list
- salt and pepper to season shopping list
- 1 lemon, juice and zest shopping list
- fresh coriander and/or coriander salt shopping list
- natural yoghurt to serve shopping list
How to make it
- Heat oil in a large pot, saute onion, garlic and celery for approx 4 minutes. Add stock, lemon juice and zest, lentils, cumin and seasoning. Bring to the boil, then lower heat and simmer covered for about 30 minutes.
- Add capsicum, spinach and more stock if needed. Recover and simmer a further 15-20 minutes.
- Serve garnished with coriander and/or coriander salt and yoghurt.
