Salty Sweet Trail Bites Recipe

How to make it

  • Combine peanut butter, honey, butter, vanilla and lime juice in small saucepan.
  • Heat over low heat, stirring well, until melted.
  • Combine all remaining ingredients in large glass bowl. Mix well to distribute flour and salt.
  • Pour peanut butter mixture into dry ingredients and stir to coat and combine.
  • Press mixture firmly into mini muffin tins that have been lightly sprayed with no stick spray or olive oil mister.
  • Fill to top, as these don't rise, and make sure to press firmly so they bake up firm.
  • Bake at 350 for about 15 minutes, until edges are just browning and they are firming up, slightly.
  • Carefully run a toothpick along the rim of each cup, but don't try to remove bites, yet.
  • Let cool completely, then they should just pop right out, using a toothpick to get them started.
