Ingredients
  • 2 tbsp olive oil
  • 1 lg onion, diced
  • 5 cloves garlic, crushed
  • 1 cup fresh basil, roughly chopped
  • 1/2 cup red wine (drinking quality - the better the wine, the better the sauce)
  • 1 lg can (800g) crushed tomatoes
  • salt and pepper to season

Directions
  1. Saute onions on lowest heat and covered, for 10 minutes. Add the garlic and basil, recover, and saute a further 5 minutes or so.
  2. Uncover and add the wine. Simmer and reduce about half the liquid. Add tomatoes, salt and pepper. Taste for seasoning.
  3. Simmer a further 15 minutes or so, uncovered, until yum and the right consistancy.

You know I never thought of putting red wine in my pasta sauce, how silly I drink it whilst Im cooking!


EXCELLENT RECIPE! No added sugar or water and the quality of the red wine is important!
