Tuscan White Bean, Tuna And Fennel Salad

- 2 scallions, chopped shopping list
- 1 medium carrot, diced shopping list
- 1 cup chopped fennel bulb shopping list
- 1 or 2 tbsp chopped fresh basil shopping list
- 1 tbsp chopped fennel fronds shopping list
- 2 tbsp capers, drained and rinsed shopping list
- 2 tbsp olive oil shopping list
- 1 tbsp white balsamic vinegar shopping list
- 1 tsp Tuscan or italian seasoning blend shopping list
- 1/2 tsp pepper shopping list
- 1 6 oz. can tuna, drained and flaked shopping list
- 1 15.5 oz can cannelini beans, drained and rinsed shopping list
- 4 cups chopped romaine or other lettuce blend shopping list
How to make it
- Combine everything except lettuce (this will store covered in refigerator for a couple days - you may need to add a splash more vinegar and/or oil as needed)
- Serve on or tossed with lettuce.
- (You can also add tomatoes and/or cucumbers...whatever veggies you have on hand!)
- For Weight Watchers, this comes out to 6 PointsPlus per serving
