Red Lentil Soup (dahl)

- 1 large onion shopping list
- 1 tablespoon olive oil shopping list
- 3 cloves of garlic shopping list
- 1 jalapeno, seeded and minced (jalapeno was out of season so I used a teaspoon of chilli flakes and teaspoon of cayenne pepper) shopping list
- 3 cups vegetable broth (stock) (less if you pre-soak your lentils) shopping list
- 1 cup dry red lentils shopping list
- 1 teaspoon tumeric shopping list
- 1 1/2 teaspoons cumin shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon fresh ginger, grated or finely chopped shopping list
- 2 small tomatoes, chopped (again, out of season so I used half a can of chopped tomatoes) shopping list
- 1/4 cup fresh cilantro, chopped shopping list
How to make it
- First, it is important to wash your lentils.
- To wash, add them to a bowl and add water and stir the lentils around with your hands. You will notice the water change colour. Do this a few times with fresh water until water is pretty clear.
- Although many people will tell you that you don't need to soak lentils overnight (and technically they are right), many people, myself included, find that after eating non-soaked lentils you need to make more toilet stops - not diarrhea or anything that dramatic just more pit stops.
- In a medium soup pot, saute the onion until translucent.
- Add garlic and jalapeno (or replacement spice) and saute for another couple of minutes.
- Next add lentils, tumeric, cumin, salt, ginger and broth.
- Bring to the boil then reduce heat, cover and simmer for 15 minutes or until lentils are tender.
- Add tomatoes and cilantro and cover with a lid and remove from the heat.
- Let stand for two to three minutes before serving.

I never put my lentil soups in a blender either - not because I don't have one, but because my mum always skipped that step while I was growing up. I prefer a more interesting texture. :) It looks absolutely delicious.

The spice in this soup are great! I had mine with some rice and a slice of cold goat cheese mixed in.
