How to make it

  • Cook broccoli in boiling salted water until just tender; drain, toss with a squeeze of lemon juice, and set aside.
  • Bring a medium pot of salted water to a boil and add the soba. Cook according to package instructions (usually about 6 minutes) and drain, but do not rinse.
  • Over low heat, add the butter, yogurt, mentaiko and broccoli to the pot with the soba and mix well to combine.
  • Season to taste with soy and chili and serve.

    softie...you can find it in the refrigerated section of a Japanese grocery like Sunrise or JasMart. It's the color of coral and comes in a glass jar.
    I haven't been able to find an online source yet but will update with the info if I do....

    ***it just occurred to me that one possible substitute would be tarama, which is Greek cod roe. It's not spicy, but a pinch of cayenne would probably compensate. This is available at many supermarkets.
