How to make it

  • Spread chili in greased 8x11 pan. Top w/ cheese. Stir milk and egg into cornbread. Mix. Spread on top of chili. Bake at 375 until golden brown. Waaa-la!

    What's not to like about this? Easy weeknight cooking. I sprayed my pan with cooking spray. My cornbread was not entirely done in the very middle after 25 minutes but that doesn't matter to me as I am going to heat up leftovers in the microwave. If you were going to serve this for a group right away, I would suggest a toothpick test. I wish I had a small can of corn to throw in with the chili. Next time. I used about a cup of Mexican blend cheese. Great stuff. Added to IMI 9/15/15
