Chili N Cheese Cornbread
Its pretty rare for me to cook on a weeknight as I work all week and its just me. Well, just me and a bunch of four legged critters! Still, it was cold here tonight as (thank the Universe!!) we are supposed to have rain tomorrow!! Yayyyy!! (We seriously need emoticons here.) Too late for our poor neighbors to the southeast but it will help our hard working fire fighters. The ingredients in this recipe are something I always have on hand. This was perfect for me and I will have nice warmed up leftovers tomorrow's rainy evening.

Bakerme, I am lucky that I have tons of natural light in my kitchen.
I was thinking that it definitely could be made with homemade chili and I don't know why you also couldn't use homemade cornbread. It seems like this would be a good dish to use up some leftover chili, in fact. I was also thinking some chopped onion would be good in it.
