Cucumber Soup

- 2 quarts water shopping list
- 4-5 large potatoes peeled and cleaned shopping list
- 3 medium cucumbers, peeled and sliced paper thin on grater shopping list
- salt and pepper to taste shopping list
- 1/2 pint light cream shopping list
- fresh dill shopping list
How to make it
- Boil potatoes in 2 quarts water add some salt and cook. Remove potatoes and mash place back into pot. Add peeled and grated fine cucumbers. Cook until transparent. Remove from heat. Add cream salt and pepper. Sprinkle dill and serve.
- Add the cream and seasoning last along with the dill before serving. Sometimes for a party or get together I make the base and bring it all up to a reheat and add the cream, seasoning and dill..
- This is very refreshing and a great summer dish.
