Tumeric Chicken

- 2 tbsp oil shopping list
- 500g chicken, skin removed, cut into 5cm pieces shopping list
- 3 stalks lemongrass, bruised shopping list
- 2 cups water shopping list
- juice of 4 limes shopping list
- 1 tbsp sugar shopping list
- 2 tsp salt shopping list
- spices (ground or blended) shopping list
- 10 dried chillies, soaked in water for 15 mins & squeezed dry shopping list
- 12 shallots shopping list
- 4cm tumeric shopping list
- 4cm-piece belacan or shrimp paste shopping list
How to make it
- Heat oil in a pan over medium fire. When hot, stir-fry ground spices untill fragrant, about 3 mins.
- Add chicken & lemongrass & cook for 5 mins.
- Add water, lime juice, sugar & salt. Continue to cook for 20 mins until gravy thickens & chicken is tender.
- Serve hot with white rice.
