Ingredients

How to make it

  • Chop the onion coarsely.
  • Saute in olive oil in a large, heavy pot over low heat until soft.
  • Add curry powder and saute for a minute.
  • Chop the zucchini coarsely and add to the pot.
  • Saute until zucchini is soft and some of its liquid has evaporated - about 10 minutes.
  • Add enough chicken stock to cover zucchini and simmer for about 20 minutes.
  • Take off the stove and let cool slightly.
  • Blend in batches until very smooth (can use a strainer to get rid of any remaining bits).
  • Add greek yogurt and serve either warm or cold. Do not reheat.
