Zucchini Soup

- 1 large yellow onion shopping list
- 1 tb olive oil shopping list
- 1 tb curry powder shopping list
- 4 medium to large zucchini shopping list
- 1/2 dried red chili pepper shopping list
- 2-3 cups chicken stock (enough to cover zucchini when simmering) shopping list
- 1/2 c. non-fat Greek yogurt shopping list
How to make it
- Chop the onion coarsely.
- Saute in olive oil in a large, heavy pot over low heat until soft.
- Add curry powder and saute for a minute.
- Chop the zucchini coarsely and add to the pot.
- Saute until zucchini is soft and some of its liquid has evaporated - about 10 minutes.
- Add enough chicken stock to cover zucchini and simmer for about 20 minutes.
- Take off the stove and let cool slightly.
- Blend in batches until very smooth (can use a strainer to get rid of any remaining bits).
- Add greek yogurt and serve either warm or cold. Do not reheat.
