Chicken Cacciatore

- 3 large boneless breasts, cut in half (or 6 thighs) shopping list
- salt and pepper shopping list
- flour shopping list
- EVOO shopping list
- 1 large onion, diced shopping list
- 3 garlic cloves, minced (or 3 scoops of minced jarred garlic) shopping list
- 1 large container of baby bella mushrooms, cleaned and halved shopping list
- 1 jar of roasted red peppers, sliced shopping list
- 3/4c dry white wine shopping list
- 1 28-oz can diced tomatoes with juice shopping list
- 2 Tbsp capers, drained shopping list
- 1Tbsp oregano shopping list
- 1/2Tbsp basil shopping list
- 1 6-oz can tomato paste shopping list
- splash of balsamic vinegar shopping list
- crushed red pepper flakes (opt.) shopping list
How to make it
- Season chicken pieces with salt and pepper and dredge with flour to coat.
- Brown chicken in EVOO on medium heat until brown. (10 min.) Cook in batches to not crowd the pan. Remove and set aside.
- Add onion, garlic , mushrooms and roasted red pepper and cook until tender. (5 min.)
- Add wine and reduce by half.
- Add diced tomatoes, capers, spices, paste, vinegar, and flakes (if using). Add reserved chicken pieces.
- Cook for 1 hour.
- Serve over linguine, penne or potatos.
