How to make it

  • Season chicken pieces with salt and pepper and dredge with flour to coat.
  • Brown chicken in EVOO on medium heat until brown. (10 min.) Cook in batches to not crowd the pan. Remove and set aside.
  • Add onion, garlic , mushrooms and roasted red pepper and cook until tender. (5 min.)
  • Add wine and reduce by half.
  • Add diced tomatoes, capers, spices, paste, vinegar, and flakes (if using). Add reserved chicken pieces.
  • Cook for 1 hour.
  • Serve over linguine, penne or potatos.
