Smoky Eggplant Salad

- 1 eggplant (fat) shopping list
- 6 tomatoes shopping list
- 1 onion (middle size) shopping list
- herbs (mint, dill, parsley), preferably fresh shopping list
- salt shopping list
- ½ dl lemon juice shopping list
- ½ dl olive oil shopping list
How to make it
- Grill the eggplant on an open fire until entirely soft (and probably black). Check with a fork or knife!
- Let the eggplant cool down.
- Chop up the tomatoes, onion and the herbs in to small pieces.
- Peal the eggpland and chop it up as well. It might look like a mess :).
- Put everthing in a bowl.
- Add the lemon juice, olive oil, herbs and salt (more/less lemon juice and olive oil, it depends on your taste).
- Mix everything and let it wait for about 10min before serving.
