How to make it

  • Grill the eggplant on an open fire until entirely soft (and probably black). Check with a fork or knife!
  • Let the eggplant cool down.
  • Chop up the tomatoes, onion and the herbs in to small pieces.
  • Peal the eggpland and chop it up as well. It might look like a mess :).
  • Put everthing in a bowl.
  • Add the lemon juice, olive oil, herbs and salt (more/less lemon juice and olive oil, it depends on your taste).
  • Mix everything and let it wait for about 10min before serving.

    hmmm love eggplant grilled over an open flame is so good, usually just grill em, peel n mash em adding a little lemon juice and away you go

    but can't wait to try this recipe too!
