How to make it

  • Heat 2 TBS oil in large skillet over med. heat,add onions,saute 3-5 mins,till translucent,then add garlic,thyme,tarragon,salt and pepper. Cook another min,next add mushrooms and cook 7-10 mins till very soft,lowering heat,if necessary to prevent burning.
  • Add cooked mushroom mixture to walnuts in food processor,along with balsamic vinegar,beans and remaining TB of olive oil.
  • Process till smooth,adding vegetable broth,1 TB at a time,as needed. Combine to puree ingredients till pate resembles smooth,thick and spreadable paste.
  • Scrape mixture into airtight container and chill at least 1 hour before serving...

    I love these types of spreads. They are terrific for snacking with company but I also like to use the left overs as spreads on wraps.
