How to make it

  • Preheat the oven to 375 degrees.
  • In a skillet, heat the oil and fry the onion for about 5 minutes.
  • Add the garlic,tomatos, tomato paste, wine and seasoning.
  • Bring the sauce just to a boil, then reduce the heat slightly and cook uncovered for 15-20 minutes until it is thick.
  • Stir in the parsley.
  • Grease a baking dish and place in the cod steaks.
  • Spoon an equal amount of the tomato mixture onto each steak.
  • Sprinkle the dried bread crumbs over top.
  • Bake for 20-30 minutes, basting the fish occasionally with the sauce until the fish is tender and cooked through, and the bread crumbs are golden and crisp.
  • Serve hot with new potatoes and a garden salad.

    I dont do alot of bakes fish..but this sounds really good...Will give it a try...
