Baked Cod with Tomatoes

- 4 cod steaks shopping list
- 2 teaspoons, or so, of olive oil shopping list
- 1 onion, peeled and chopped shopping list
- 2 cloves garlic, finely chopped shopping list
- 1 pound tomatoes, 2 large, peeled, seeded and chopped shopping list
- 1 teaspoon tomato paste shopping list
- 4 tabespoons dry white wine shopping list
- 4 tablespoons fresh parsley, chopped shopping list
- 2 tablespoons dried bread crumbs shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat the oven to 375 degrees.
- In a skillet, heat the oil and fry the onion for about 5 minutes.
- Add the garlic,tomatos, tomato paste, wine and seasoning.
- Bring the sauce just to a boil, then reduce the heat slightly and cook uncovered for 15-20 minutes until it is thick.
- Stir in the parsley.
- Grease a baking dish and place in the cod steaks.
- Spoon an equal amount of the tomato mixture onto each steak.
- Sprinkle the dried bread crumbs over top.
- Bake for 20-30 minutes, basting the fish occasionally with the sauce until the fish is tender and cooked through, and the bread crumbs are golden and crisp.
- Serve hot with new potatoes and a garden salad.
