Baked Cod With Tomatoes Recipe
Use fresh garden sun-ripened tomatoes and the catch-of-the-day to make this super easy and delicious dish.

Ingredients
  • 4 cod steaks
  • 2 teaspoons, or so, of olive oil
  • 1 onion, peeled and chopped
  • 2 cloves garlic, finely chopped
  • 1 pound tomatoes, 2 large, peeled, seeded and chopped
  • 1 teaspoon tomato paste
  • 4 tabespoons dry white wine
  • 4 tablespoons fresh parsley, chopped
  • 2 tablespoons dried bread crumbs
  • salt and pepper to taste

Directions
  1. Preheat the oven to 375 degrees.
  2. In a skillet, heat the oil and fry the onion for about 5 minutes.
  3. Add the garlic,tomatos, tomato paste, wine and seasoning.
  4. Bring the sauce just to a boil, then reduce the heat slightly and cook uncovered for 15-20 minutes until it is thick.
  5. Stir in the parsley.
  6. Grease a baking dish and place in the cod steaks.
  7. Spoon an equal amount of the tomato mixture onto each steak.
  8. Sprinkle the dried bread crumbs over top.
  9. Bake for 20-30 minutes, basting the fish occasionally with the sauce until the fish is tender and cooked through, and the bread crumbs are golden and crisp.
  10. Serve hot with new potatoes and a garden salad.
