Ralley's Farm House Special Aka Avocado Chicken Salad

- 3 Tbsp olive oil shopping list
- 2 boneless skinless chicken breasts...we always picked a deli roasted chicken or 2 and used that as it made it so easy shopping list
- 1 tsp chili powder shopping list
- 1/4 tsp each salt and pepper shopping list
- 1/4 c chopped fresh cilantro shopping list
- 2 Tbsp lime juice or cider vinegar shopping list
- 1/4 tsp each sugar and hot pepper sauce shopping list
- 1 clove garlic, minced shopping list
- 2 Tbsp mayonnaise shopping list
- 2 c cooked corn kernels shopping list
- 1 avocado , peeled and cubed shopping list
- 1 sweet red pepper sliced shopping list
- 1 sm red onion sliced shopping list
- 1 head boston lettuce, separated shopping list
- 4 hard-cooked eggs, quartered shopping list
- 2 tomatoes cut into wedges shopping list
How to make it
- If you're cooking your own chicken brush it with 2 tsp of the oil and sprinkle with the chili powder and a pinch of salt/pepper. Grill over medium high heat about 8 mins until no longer pink.Slice.
- If using a deli roasted chicken just cut up into slices and set aside.
- Mix the dressing:
- I always double or triple this part even if I don't double or triple the salad as it is so good and I like lots of dressing...you choose!!
- Whisk together the cilantro, lime juice,sugar,hot pepper sauce, garlic and remaining oil, salt and pepper.Remove 2 tsps and mix with mayonnaise.
- Toss the corn , avocado, red pepper and onion with remaining dressing.
- To assemble:
- This was our idea and we still serve it wthis way...makes quite a presentation!!
- Arrange all the clean torn lettuce on the platter.
- Mound the corn and avocado mixture on platter. Arrange sliced chicken around and over the corn mixture.Surround with eggs and tomatoes. Drizzle the mayo mixture over top.
- We served it with crusty rolls and yes, some weekends not just lemonade we had wine!!
- This is so delicious!!!
