Pork And Potato Goat Cheese Gratin

- 2lbs lesser cut boneless pork, cut into cubes(I just used country style ribs) shopping list
- 1 large lemon shopping list
- 4 large russet potatoes, sliced very thin(I don't peel) shopping list
- 1 large onion, sliced very thin(or 2 medium) shopping list
- 1 1/2 cups heavy cream shopping list
- 1 cup half and half shopping list
- 10-12oz goats cheese shopping list
- 4 cloves garlic, minced shopping list
- 2T dried dill weed or 3T fresh dill, minced shopping list
- 1/2-2t cayenne shopping list
- 1/4t freshly ground nutmeg shopping list
- kosher or sea salt or fresh ground pepper shopping list
How to make it
- Combine cream, half and half, cheese, garlic, dill, cayenne and nutmeg in medium saucepan.
- Cook over low heat, stirring often, until cheese melted and sauce thickens, slightly, and set aside.(you can add a touch of a corn starch slurry, if desired, but I didn't. The sauce will thicken, slightly, upon standing.)
- Lightly oil a 9X13 baking dish.
- Place half of potatoes to cover bottom of pan, slightly overlapping is fine.
- Add a layer of half of the onion slices over potatoes.
- Sprinkle with salt and pepper.
- Add half of the pork cubes.
- Drizzle with juice from half a lemon.
- Pour half of the cheese sauce over these layers. See Photo
- Repeat with remaining ingredients.
- Bake at 400 for about an hour and 10 minutes or so, until potatoes are tender. See Photo
- Let rest for about 10 minutes to set. This might not always serve up beautifully, but it sure is tasty! :)
