Walking Salad For One

- 1 good-sized apple shopping list
- 2 tablespoons cottage cheese shopping list
- 5 or 6 raisins (if you like raisins, otherwise skip them) shopping list
- 2 or 3 nuts, chopped (I used walnuts) shopping list
- 1 teaspoon mayonnaise shopping list
How to make it
- Cut the top off the apple and set that part aside.
- Core the apple almost all the way through, leaving the bottom skin intact.
- Scoop out the pulp and chop with the cottage cheese, raisins, and nuts (you probably won't need to chop it, as you'll most likely end up with a bunch of little chunks of apple from the pulping)
- Mix with mayonnaise
- Stuff the mixture into the hollow apple and stick the top on it.
- Eat it with a spork or spoon - enjoy!

Perfect lunch! But since I won't be walking on a nature trail when I eat this (even though I would truly enjoy that!) I won't put the salad back into the apple, will probably just use a dish. :-)

I love this salad for a quick snack/meal for one! But I'm not posting a photo here because I just chopped the apple and ate the salad in a bowl - not in the hollow apple as the recipe says. I used cashews. Thanks rarariver!
