Very Cherry Gluten Free Coffeecake

- Coffeecake: shopping list
- 4 eggs shopping list
- 3/4 cup milk shopping list
- 1/2 cup butter, melted shopping list
- 2 teaspoons gf vanilla shopping list
- 3 cups gf baking mix ( whichever kind works best for your area) shopping list
- 2/3 cup granulated sugar shopping list
- 1 can (21oz) gf fruit pie filling shopping list
- Glaze: shopping list
- 1 cup gf icing sugar shopping list
- 2 tbsp milk shopping list
How to make it
- 1. Heat oven to 375F. Grease a 9x13 inch baking pan with shortening or wheat free cooking spray.
- 2. In a large bowl, stir all the coffeecake ingredients except the pie filling until blended. Beat vigorously for 30 seconds. Spread 2/3 of the batter in the baking pan.
- 3. Spread pie filling over batter and drop remaining batter by tablespoonfuls onto pie filling.
- 4. Bake 20 - 25 minutes or until golden brown. Meanwhile in a small bowl, mix glaze ingredients until smooth. Drizzle glaze over warm coffee cake.
- Serve warm or cool.
