How to make it

  • 1. Heat oven to 375F. Grease a 9x13 inch baking pan with shortening or wheat free cooking spray.
  • 2. In a large bowl, stir all the coffeecake ingredients except the pie filling until blended. Beat vigorously for 30 seconds. Spread 2/3 of the batter in the baking pan.
  • 3. Spread pie filling over batter and drop remaining batter by tablespoonfuls onto pie filling.
  • 4. Bake 20 - 25 minutes or until golden brown. Meanwhile in a small bowl, mix glaze ingredients until smooth. Drizzle glaze over warm coffee cake.
  • Serve warm or cool.
