How to make it

  • Add olive oil to hot saute/frying pan.
  • Saute onion slices till translucent and add diced garlic. Stir for one minute to flavor oil.
  • Stir in two cans of beans with liquid. Season with salt and pepper.
  • Cover and stir often over 30 minutes until some of the beans have become creamy.
  • Place spinach over the top and cover for 5 minutes. The spinach will wilt and can then be stirred into the beans. Taste for proper seasoning.
  • Serve as a side dish to chicken or pork.
  • Enjoy.

    Oh gawd this looks perfect! I'm hungry now....thanks. It's chilly and rainy out today, the woodstove is burning and keeping us warm indoors- this is just the right food for today. Thanks for sharing, will save this and make it - guaranteed!
