How to make it

  • Preheat oven to 400 degrees F.
  • In a large bowl, gently combine ground beef, pancetta, onion, Emmenthaler cheese, and lemon rind. Do not over-work the meat.
  • Add the bread crumbs, pine nuts, mascarpone cheese, Parm-Regg, egg, salt, pepper, garlic powder, cinnamon, and nutmeg, stirring gently to combine.
  • Shape roughly into a loaf and place in a glass loaf pan.
  • Do not press down meat.
  • Cover with tin foil.
  • Bake 45 mins in preheated oven, remove foil and bake 10 mins longer.
