Fussy Italians Meatloaf

- 1 1/4 Lb lean or extra-lean ground beef shopping list
- 1/8 pound thinly sliced pancetta, chopped shopping list
- 1 vidalia onion, diced shopping list
- 1/3 pound emmenthaler cheese, diced shopping list
- 1/2 teaspoon grated lemon rind shopping list
- 2 toasted whole-grain bread slices, processed into large crumbs shopping list
- 1/4 cup pine nuts, ground to a powder shopping list
- 1/4 cup mascarpone cheese (or sour cream) shopping list
- 1/4 cup fresh-grated Parmigano-Reggiano shopping list
- 1 egg, beaten shopping list
- Pinch each of salt, pepper, garlic powder, cinnamon and nutmeg shopping list
How to make it
- Preheat oven to 400 degrees F.
- In a large bowl, gently combine ground beef, pancetta, onion, Emmenthaler cheese, and lemon rind. Do not over-work the meat.
- Add the bread crumbs, pine nuts, mascarpone cheese, Parm-Regg, egg, salt, pepper, garlic powder, cinnamon, and nutmeg, stirring gently to combine.
- Shape roughly into a loaf and place in a glass loaf pan.
- Do not press down meat.
- Cover with tin foil.
- Bake 45 mins in preheated oven, remove foil and bake 10 mins longer.
