How to make it

  • In a large casserole or saucepan, heat the oil and fry the onions on a high heat for 2 minutes. Add the cubed meat and fry for a further couple of minutes until sealed.
  • Add the wine, stock cube - then leave to simmer for an hour or so - until the meat is tender.
  • Add all the other ingredients - plus more liquid if required, adjusting the seasoning to taste.
  • Simmer for another 20 minutes, until the potatoes are done.
  • Serve with crusty bread
  • If you like a thicker gravy, stir in a little cornflour, added to a bit of water, before serving
