How to make it

  • Peel and grate potatoes and onion in a food processor. Transfer to a kitchen towel (this is the worst part) and squeeze out the excess water.
  • In a large bowl, combine grated mixture with egg, flour, spices, ginger and cilantro.
  • Stir in peas and season well with salt and pepper.
  • Heat a few tbsp. of oil in a large skillet over medium high heat. Drop mixture into skillet by the large spoonfuls. For crisp, lacy pancakes, (which is how I do them), flatten mixture with a spoon.
  • Fry in batches, turning once, for 4 min. or so on each side or until golden brown.
  • Drain on paper towels and serve immediately. Yummmmyyyy!

    This looks great - I'd love it for lunch, too! :) Addressing the "kitchen towel worst part" thing - I just posted a recipe for hash browns from Simply Recipes in which they suggest you use a potato ricer to squeeze excess moisture from the potatoes. It worked great and is probably faster and less messy than the kitchen towel!
