Indian Pea And Potato Pancakes

- 5 potatoes, peeled shopping list
- 1 med. onion shopping list
- 2 eggs shopping list
- 2 tbsp. flour shopping list
- 1/2 tsp. coriander shopping list
- 1/2 tsp. turmeric shopping list
- 1/2 tsp. cumin shopping list
- 1 tbsp. garam masala shopping list
- 2 tbsp. grated ginger shopping list
- 2 tbsp. chopped cilantro shopping list
- 1/2 cup frozen peas shopping list
- salt and pepper to taste shopping list
- vegetable oil for frying shopping list
How to make it
- Peel and grate potatoes and onion in a food processor. Transfer to a kitchen towel (this is the worst part) and squeeze out the excess water.
- In a large bowl, combine grated mixture with egg, flour, spices, ginger and cilantro.
- Stir in peas and season well with salt and pepper.
- Heat a few tbsp. of oil in a large skillet over medium high heat. Drop mixture into skillet by the large spoonfuls. For crisp, lacy pancakes, (which is how I do them), flatten mixture with a spoon.
- Fry in batches, turning once, for 4 min. or so on each side or until golden brown.
- Drain on paper towels and serve immediately. Yummmmyyyy!
