Honey Fruit Cookies

This cookie evolved out of one made by G-Roberts. I've added the lemon zest and a little ginger to perk up the flavor factor and even though I'm not fond of candied fruit, these are a big hit for cookie swaps.
Ingredients
- 1/2 cup of unsalted butter shopping list
- 1/2 cup of granulated sugar shopping list
- 1/2 cup of orange blossom honey shopping list
- zest of one lemon shopping list
- 1/2 tsp of salt shopping list
- 1 egg shopping list
- 1 tsp of vanilla shopping list
- 1/2 teaspoon of ground ginger shopping list
- 2 1/3 cup of sifted flour shopping list
- 1/2 tsp of baking soda shopping list
- 1/2 tsp of baking powder shopping list
- 1 cup of mixed candied fruit shopping list
- 1/2 cup of chopped pecans or walnuts-your choice shopping list
How to make it
- Cream the butter and sugar together.
- Beat in the honey, salt and lemon zest.
- Add the egg, the vanilla and beat well.
- Sift dry ingredients together in a large bowl.
- Stir in wet mixture to dry and mix well.
- Add the fruit and nuts.
- Drop by the spoonful on baking sheet.
- Bake at 350 degrees for 12 to 15 minutes.
- I tie these up in cellophane bags for Christmas gifts.
