Spicy Roasted Chicken with Cherry Tomatoes

- 2 tablespoons olive oil, divided shopping list
- 1 1/2 pounds cherry tomatoes, halved shopping list
- 4 teaspoons garlic, minced shopping list
- 1 1/2 teaspoons crushed red pepper flakes (or to taste) shopping list
- 1 tablespoon lemon zest shopping list
- 2 tablespoons lemon juice shopping list
- 1 1/2 teaspoons dried oregano shopping list
- 1/2 teaspoon kosher salt shopping list
- 1/2 teaspoon ground black pepper, or to taste shopping list
- 4 large chicken breast halves (about 2 pounds total) shopping list
- 4 large chicken thighs (about 2 pounds total) shopping list
How to make it
- Trim chicken of excess fat and set aside.
- Grease a shallow roasting pan with 1/2 teaspoon oil.
- Spread tomatoes in pan and set aside.
- In large bowl, combine remaining oil, garlic, red pepper flakes, lemon zest, lemon juice, oregano, salt and pepper.
- Coat chicken pieces with oil mixture.
- Place chicken skin side up on top of tomatoes.
- Roast at 400 degrees for 40 to 45 minutes or until chicken juices run clear.
- Divide chicken and tomatoes between 4 dinner plates or arrange all on large platter.
- Enjoy.
