How to make it

  • Trim chicken of excess fat and set aside.
  • Grease a shallow roasting pan with 1/2 teaspoon oil.
  • Spread tomatoes in pan and set aside.
  • In large bowl, combine remaining oil, garlic, red pepper flakes, lemon zest, lemon juice, oregano, salt and pepper.
  • Coat chicken pieces with oil mixture.
  • Place chicken skin side up on top of tomatoes.
  • Roast at 400 degrees for 40 to 45 minutes or until chicken juices run clear.
  • Divide chicken and tomatoes between 4 dinner plates or arrange all on large platter.
  • Enjoy.
