Honey Ginger Ale Recipe
This recipe is straight from Mother Earth News. It's not sweet, but has lots of flavor. Because it ferments to get carbonization, there is a bit of alcohol.

Ingredients
  • 1 gallon water
  • 1 cup honey
  • 2 lemons
  • 1 cup loosely packed hop flowers, optional
  • 2 pieces of ginger, thumb sized
  • 1/2 tsp ale or champagne yeast

Directions
  1. Combine water, honey, and hops in a stockpot. Add the juice from the two lemons and bring to a boil.
  2. Grate ginger and add to the pot. Simmer for 30 minutes. Allow to cool and then add the yeast.
  3. Let the soda stand at room temperature for 24 hours, then use a funnel and strainer to pour the soda into bottles (I used a growler I bought from a local brewery to bring their tapped beer home. Recycled and sanitized 2 liter or individual plastic bottles are recommended as they're safer if the pressure becomes too much and they explode). Leave 1 to 2 inches of empty space at the top of the bottle and attach the bottle caps.
  4. Write the date on the bottles and store them in a warm, draft-free place, ideally at room temperature, for an additional 24 hours. Then refrigerate - for best results, leave the bottles in the refrigerator for an additional day or two before drinking.
  5. I know enough people who have had experiencing brewing beer and have explosion stories, that I was kind of worried. I found myself relieving the pressure of the capped bottles a couple of times a day (it was REALLY cool listening to the gas being released!), and the soda was plenty carbonated come serving time.

Oh, thank you so much for posting this. I can't wait to give it a try. I've made red wine and my next door neighbor bottles his own beer (Old Dirty Dick). Richard is quite certain I'll be able to master gingerale. Wahoo!

I have a lot of untried brewing recipes, but only a few TNTs as we kind of keep brewing the same thing over and over. The ones we like the most.

I ended up with about half a bottle extra (and one empty bottle), so I combined it with the Real Grape Soda. It was REALLY good!
