My family's favorite salad dressing. Change the flavor with different vinegars, and experiment with various herbs. I use greek oregano.

Ingredients
  • 3 Tbsp. Balsamic Vinegar
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. Dijon mustard
  • 2 cloves garlic, crushed
  • 1/2 c. olive oil
  • Honey, to taste
  • Salt and pepper

Directions
  1. Whisk all ingredients together, seasoning as necessary.
  2. Serve over a salad of mixed greens, sliced red onions, julienned red peppers, cucumbers, halved and seasoned cherry tomatoes, toasted pine nuts and feta cheese.
