How to make it

  • In a Dutch oven cook bacon until crisp
  • Remove and crumble, reserving drippings
  • Saute onion in bacon drippings until tender
  • Add salt and pepper
  • Stir in flour and cook for one minute, stirring constantly
  • Slowly add chicken broth; cook, stirring constantly until thick and bubbly Add potatoes, parsley and half & half; cook for 10 minutes
  • Stir in cheese and sour cream.
  • Garnish with cheese, bacon, chives and sour cream.

    THIS WAS DELICIOUS, I SAUTED MY ONION WITH BUTTER AND MADE A ROUGH WITH FLOUR, ADDED 1/2 OF THE BOX OF CHICKEN BROTH AND HALF AND HALF, THEN WHEN POTATOES GOT DONE I ADDED THE MIXTURE TO THE POTATOES AND GARASHED WITH REAL BACON BITS, CHEDDAR CHEESE. YUMMY!

    This was delicious!!! I used canola oil to saute the onion, and cooked the bacon separately for Rick to top his soup with...Next time I make this I'm using bread bowls:) Thanks so much for sharing!
