This recipe is easy and is done on top of the stove, so you don't have to heat up the oven. And it uses one of my favorites,pork ribs

Ingredients
  • 2 to 2 1/2 lbs. country-style pork ribs
  • 2 tablespoons olive
  • 1 small onion,sliced
  • 1 small green pepper
  • 1 clove garlic, minced
  • 1 can (16 oz.) whole tomatoes
  • 1 cup chicken broth
  • 1 cup rice
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper

Directions
  1. Brown ribs in oil in large skillet over medium-high heat.
  2. Reduce heat. Cover and simmer 30 minutes, turning occasionally.
  3. Remove ribs and set aside.Keep warm.
  4. Pour off all but 1 tablespoon drippings from pan. Add onion, green pepper,and garlic. Saute over medium heat until tender.
  5. Add tomatoes and broth. bring to a boil. Stir in rice, Italian seasonings and salt and pepper to taste.
  6. Place ribs over rice. Sprinkle with more salt and pepper, if desired.
  7. Cover and simmer for 45 to 50 minutes or until rice and ribs are done.

This sounds really good...have you tried it in a slow cooker by any chance?


No. But that is a real good idea. I use my slow cooker a lot and just never thought about it.
