Honey Almond Pie Recipe
This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Bailey Estate in Mesquite, Texas in 1989.

Ingredients
  • 1 pie crust
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup light corn syrup
  • 1/3 cup butter melted
  • 1/4 cup honey
  • 3/4 teaspoon almond extract divided
  • 1 cup sliced almonds toasted
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Directions
  1. Using a whisk lightly beat eggs until just mixed.
  2. Stir in granulated sugar, corn syrup, melted butter, honey and 1/4 teaspoon of the almond extract.
  3. Mix well then stir in almonds.
  4. Pour filling into pie crust and bake at 350 for 45 minutes.
  5. Cool on rack.
  6. Whip cream, powdered sugar and remaining extracts until soft peaks form.
  7. Serve with pie.

I love almonds. I came across this last night and wasted no time in making it. This is FABULOUS! It has the texture and appearance, somewhat, of pecan pie, super easy, not time consuming, and most importantly, absolutely delicious. The whipped cream is the absolute perfect addition for this pie.

Thank you so much for this recipe...it's a keeper :)


This is similar to my Great-Grandmother's Brown Sugar Pie recipe. I can't wait to try it.
