How to make it
- In a saucepan, melt the butter into the lemon juice
- Combine the beaten eggs with the sugar and add to the pan
- Heat slowly, stirring, until the mixture thickens to the consistency of thin custard.
- Pour into the jars - it will thicken as it cools.
- Makes about 2 lbs
