How to make it

  • Preheat oven to 400°F and grease (or line with paper cups) 1-2 muffin tins.
  • In a small cup, mix milk and vinegar. Set aside.
  • In a medium bowl, whisk together the dry ingredients (flour, oats, baking soda, baking powder, salt, cinnamon and nutmeg).
  • In a large bowl, beat together the honey, egg, oil, applesauce and milk mixture.
  • Add the dry ingredients and stir just until moistened. Fold in the carrots and raisins.
  • Bake 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • These freeze well.
