How to make it

  • Beat the egg whites until stiff
  • Gently beat the yolks
  • Beat in the sugar
  • Fold in half the whipped cream
  • Fold in the egg yolks
  • Spoon into an appropriate container and freeze for 30 minutes
  • Add the Coffee and Tia Maria to the remaining whipped cream and beat into the ice cream
  • Cover and freeze
  • Allow to soften slightly before serving
