Coffee And Tia Maria Ice Cream

- 2 eggs, separated shopping list
- 1/2 cup sifted confectioners' sugar shopping list
- 2/3 cup heavy cream, stiffly whipped shopping list
- For the flavouring: shopping list
- 2 teaspoons instant coffee powder, dissolved in 2 teaspoons boiling water shopping list
- 2 teaspoons Tia Maria liqueur shopping list
How to make it
- Beat the egg whites until stiff
- Gently beat the yolks
- Beat in the sugar
- Fold in half the whipped cream
- Fold in the egg yolks
- Spoon into an appropriate container and freeze for 30 minutes
- Add the Coffee and Tia Maria to the remaining whipped cream and beat into the ice cream
- Cover and freeze
- Allow to soften slightly before serving
