Curried Pork Tenderloin

- 1- 2-1/2 lb pork tenderloin shopping list
- 2 tsp oil shopping list
- 1/2 large onion,chopped shopping list
- 1 15 oz. can coconut milk shopping list
- 1/2 c papaya,diced shopping list
- 1/2 c golden raisins shopping list
- 1/2 c dried pineapple,diced (I used apricots,didn't have pineapple) shopping list
- 1/2 tsp powdered ginger shopping list
- 2 tsp Sweet curry powder shopping list
- 1/2 tsp cinnamon shopping list
- 1 c chicken stock shopping list
- 1/2 TB fresh chopped cilantro(optional) shopping list
How to make it
- Preheat oven to 350'. Heat oil in a large skillet over med-high heat. Brown the tenderloin on all sides. Place in 9x13" baking dish.
- Add onions to the skillet and cook over med. heat till translucent. Add coconut milk.,papaya,raisins,pineapple and spices and simmer 5 mins.
- Add chicken stock and simmer for additional min. Pour over tenderloin and place in oven. Roast for 45 mins. Let rest befotr carving. Slice and serve with coconut-fruit sauce on the side. Garnish with fresh cilantro ,if desired
