How to make it

  • Preheat oven to 350'. Heat oil in a large skillet over med-high heat. Brown the tenderloin on all sides. Place in 9x13" baking dish.
  • Add onions to the skillet and cook over med. heat till translucent. Add coconut milk.,papaya,raisins,pineapple and spices and simmer 5 mins.
  • Add chicken stock and simmer for additional min. Pour over tenderloin and place in oven. Roast for 45 mins. Let rest befotr carving. Slice and serve with coconut-fruit sauce on the side. Garnish with fresh cilantro ,if desired

    Oh yes - this is a Must Do. Pineapple doesn't like me but pork and apricots? Fantastic! Thanks for a great recipe.
