Traci's Watermelon Gazpacho

- 1 red seedless watermelon - about the size of a soccer ball shopping list
- 2 cucumbers, peeled, seeded and small diced shopping list
- 2 bunches of green onions, green and white diced thin shopping list
- 1 bunch of cilantro, finely chopped shopping list
- Zest and juice of 2 limes shopping list
- 1 jalapeno, seeded and finely chopped shopping list
- 1 1/2 cups red wine vinegar shopping list
- 3/4 cup olive oil shopping list
- 2 tablespoons sugar or Splenda shopping list
- 4 cups crushed, diced, seeded tomatoes and juice shopping list
How to make it
- Slice watermelon in half. Take one half of melon (out of the rind) and put in blender; puree. Remove pureed watermelon and put in 6-quart container. Take the other half of the watermelon and dice small. Add diced melon to the puree. Then add remaining ingredients. Stir to blend. Chill and serve.
