Chicken Skewers With Avocado Sauce

- 1 lb boneless,skinless chicken breast shopping list
- 1/2 c lime juice shopping list
- 1 TB balsamic vinegar shopping list
- 2 tsp minced chipotle pepper in adobo sauce shopping list
- 1/2 tsp salt shopping list
- Sauce: shopping list
- 1 med ripe avocado,peeled and pitted shopping list
- 1/2 c sour cream shopping list
- 2 TB minced fresh cilantro shopping list
- 2 tsp lime juice shopping list
- 1 tsp grated lime peel shopping list
- 1/4 tsp salt shopping list
How to make it
- 1. Flatten chicken to 1/4" thickness;cut lengthwise into 16 1" wide strips. In resealable bag,combine the lime juice,vinegar,chipotle pepper and salt;add the chicken.Seal and turn to coat;refrigerate for 30 min.
- 2. Meanwhile,for sauce,place remaining ingredients in food processor,cover and process until blended. Transfer to serving bow,cover and refrigerate till serving.
- 3. Drain chicken and discard marinade. Thread meat onto 4 metalor soaked wooden skewers. Oil the grill grates lightly with moistened paper towel.
- Grill,covered,over med. heat or broil 4' from heat for 8-12 mins or till no longer pink,turning frequently. Serve with sauce.
