How to make it

  • Remove stems from mushrooms (DO NOT RINSE MUSHROOMS)
  • Chop about 10 stems very fine
  • In frying pan, heat olive oil and then add chopped stems, onion, pepper & garlic (also spinach if using).
  • Add pepper flakes, herb de provence, paprika, and parmesan cheese
  • Season with salt & pepper to taste (not too much salt-healthy remember)
  • Saute till tender
  • Remove to mixing bowl and add bread crumbs and mozzerella.
  • In a 13 x 9 baking dish, spray lightly
  • Stuff each cap with stuffing and place in pan
  • Bake uncovered in 350 oven for 20-30 minutes or till mushrooms are tender.
  • That's it. Enjoy!!!
