Stuffed Baby Portabello Mushrooms

- 24 baby whole portabellos shopping list
- 1/2 onion chopped shopping list
- 1/2 red pepper chopped shopping list
- 1/2 tsp garlic shopping list
- 1 tsp olive oil shopping list
- 1/4 tsp red pepper flakes shopping list
- 1 tsp herb de provence shopping list
- 1/2 tsp smoked paprika shopping list
- 2 tbsp parmesan cheese shopping list
- 2-3 tbsp bread crumbs shopping list
- 1/4-1/2 cup shredded part skin or fat free mozzerella shopping list
- optional: baby spinach leaves (not a lot) shopping list
How to make it
- Remove stems from mushrooms (DO NOT RINSE MUSHROOMS)
- Chop about 10 stems very fine
- In frying pan, heat olive oil and then add chopped stems, onion, pepper & garlic (also spinach if using).
- Add pepper flakes, herb de provence, paprika, and parmesan cheese
- Season with salt & pepper to taste (not too much salt-healthy remember)
- Saute till tender
- Remove to mixing bowl and add bread crumbs and mozzerella.
- In a 13 x 9 baking dish, spray lightly
- Stuff each cap with stuffing and place in pan
- Bake uncovered in 350 oven for 20-30 minutes or till mushrooms are tender.
