How to make it

  • Remove any shell from the crab meat. Beat eggs just enough to mix whites and yolks. Mix eggs with crab meat and salt, mix. Stir in celery, parsley and onions. Melt enough margarine to fry crab cakes without burning or "swimming" the cakes. Form mixture into 3 inch cakes, roll in bread crumbs and fry until golden brown on each side.

    Oooooh, sounds really good. Though I may replace the celery and onions with leeks and chervil.
