Discussing with friends what to do with fresh garden beets, I wanted something different than borscht, beet relish, Harvard beets or beet bread etc.. When my friend said she makes beet salad like her potato salad;it never occurred to me to make this fantastic but easy salad! Read more Make it just like you would your potato salad-only use beets! Ingredients
- 4 large garden fresh beets, cooked and peeled and chopped as you would your potatoes shopping list
- 1 white onion fine chopped shopping list
- 4 large eggs hard cooked shopping list
- dill weed to taste ( optional ) shopping list
- enough mayonnaise to bind shopping list
- fresh cracked black pepper and sea salt to taste shopping list
- 1 tsp sugar or to taste shopping list
How to make it
- Cook beets till fork tender and drain
- Cool, peel, and coarse chop as for potato salad
- Combine with chopped hard boiled eggs, mayo to bind, some dill weed to taste and salt and fresh grated pepper to taste.
- Serve immediately at room temperature or chill well and serve
